The garden is in full swing – which means zucchini abounds! lol. Not wanting any to go to waste, I decided to make this delicious recipe to highlight its flavors.

I will tell you my favorite all-time recipe for zucchini was at Bennigan’s restaurant – their fried zucchini with parmesan wasn’t on their everyday menu – but it was THE BEST!
This recipe reminds me of it – it is so simple and delicious!
How to Make Herb-infused Roasted Zucchini
Ingredients:
- 4 medium-sized zucchinis, sliced – however you prefer: lengthwise or in “chips”
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste

Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, toss the zucchini slices with olive oil, garlic, thyme, rosemary, salt, and pepper until evenly coated.
- Spread the zucchini slices in a single layer on the prepared baking sheet.
- Roast in the oven for 20-25 minutes, or until the zucchinis are tender and slightly caramelized.
- Serve hot and enjoy!

This Herb-infused Roasted Zucchini pairs well with grilled chicken or fish. You can also add it to pasta dishes for an extra burst of flavor.
