It has been so cold here lately! So, today I decided I wanted soup! Just a nice simple hearty veggie Crock Pot soup.
This is a great recipe, and hearty soup that the whole family will love. Even the picky eaters at the table will love this homemade soup with its savory broth.
Hearty Veggie Crock Pot Soup
I mean, who doesn’t love a hot bowl of soup to keep them warm on a cold day?
You can make this crockpot soup on the stove top or in your pressure cooker like an instant pot. The best part about this perfect soup is that it’s so customizable you can pretty much throw in all of your favorite vegetables, and it will be yummy.

Or you can add the veggies your entire family love. You can even use any extra vegetables or leftover vegetables you already have.
If you want to add grains to this easy recipe, I suggest red lentils, whole wheat pasta, or brown rice, or you could do any of your family’s favorites.
It only takes a little work and not much time to make this delicious recipe.

Our town had many activities planned for the game – all week in fact, but, this week school has been closed everyday but Monday and it was just called off for tomorrow! No one wants to go outside!
It’s supposed to snow again tomorrow, there is a chili cook-off planned for Saturday – maybe the weather will cooperate!
Hubby found this amazing display at Walmart yesterday – too cold for a girl to go out!

Ingredients
1 can Hunt’s Diced Canned Tomatoes
1 can Hunt’s Stewed Tomatoes
1 can Hunt’s Green Pepper and Onion Diced Tomatoes
1 lb ground turkey or you can use ground beef
1 can Del Monte Green Beans
1 can Sweet Peas
2 fresh squash – sliced you can also use sweet potatoes
1 fresh yellow onion – chopped
2 tbsp. minced garlic
Frozen Vegetables like crinkle cut carrots
You can also add additional vegetables and beans such as cannellini beans
I used my handy dandy Salt-FREE Mrs. Dash Seasoning Blends they sent me. I used:
Onion & Herb
Original Blend
Garlic & Herb
and
Tomato Basil Garlic
I really like how they really season without salt! I know that sounds funny – but, honestly I hadn’t tried too many things like this before, but, it really makes for great seasoning – and much healthier for the family, too!
Here’s what I did:
I browned the ground turkey and chopped onion together and put all the tomato products in the Crock Pot,
Then added the turkey and onion mixture and all the veggies and seasonings.
Stirred and left it alone on low for 8 hours, it could be cooked in less time on high.

- Bay leaves
- Chicken broth
- Vegetable broth
- Tomato paste
- Bell pepper
- Fresh vegetables like Fresh green beans
- Worcestershire sauce
- Olive oil
- Garlic powder
- Fresh parsley
- Mixed veggies
- White beans
- Garbanzo beans
- Tomato sauce
- Parmesan cheese
- Lemon juice
- Bay leaf
- Vegetable stock
- Black beans
- Sour cream

Did you use all 4 seasonings? Look at you. You cooked! This looks really tasty and perfect for tomorrows repeat snow day. I was leaving town in the morning to drive to the mountains but I have a feeling that won’t be happening.
