Roasted Radishes Recipe
My husband and I went Keto a few years back and we love radishes in pot roast – they taste like potatoes when we do them that way. I’ve even begun growing radishes myself.

I have been at my family reunion this weekend and didn’t do much cooking. I had a blast and ignored all technology for about 3 days.
What I did cook that was very different last week were roasted radishes. Have you ever roasted a radish? I have eaten many radishes in my life on salads or with dip but I have never cooked them.
My daughter sent some to me last week that her husband grew in the garden and told me that I should try roasting them for a new taste treat. So I did…..and just like all my other roasted veggies.

Toss gently to combine. (Dian’s tip: I throw them in a Ziploc baggie to shake them up and coat them thoroughly)

2 1/2 cups chopped radishes
1/2 onion, chopped
6 garlic pods
1 tbsp olive oil
1/2 tsp Mrs. Dash (Original Flavor)

Toss all the ingredients together and roast at 400 for 20 minutes.
I think you will be pleased with the taste change of a roasted radish. Sometimes the raw ones are a little bitter to me but these were delicious, though rich. They were also quite pretty.

I have taken to full sized cooking on the weekends. I am not doing freezer cooking rather I will pop a full roast, a couple of full chickens, or maybe a turkey , or a ham into the oven then I am off to clean or do other necessary chores for a few hours while they cook. I server our meal out of it the first night then I pack it up and take it to my Mom’s she turns it into easy meals for me for the rest of the week Turkey pot pie, turkey chili , we have turkey and club sandwiches at her home and she even made me a turkey alfredo casserole! That was last week this week we have three roasted chickens bought on manager special $8.27 minus $2.00 off coupons. I did the main cooking she does all the rest of the work this works out great as she is home during the day and watches our children and I am available on the weekends to cook the main large item it helps us both with our grocery budget and I feel like it is less work for each of us (although Mom might not think so !)
