My good friend Karen was sweet enough to help me while I am away at Bloggy Bootcamp – she has written a great guest post telling you about a recipe of hers that I tried and really liked, hope you do, too! Thanks, Karen!!
Are you ready for some FOOTBALL? 🙂 Football Season is one of my favorite times of the year. I thought it’d be fun to share one of my favorite Football recipes with you.
Ingredients:
- Pizza dough (I have used Pillsbury and Publix bakery dough – I think we prefer Publix, but it’s difficult to roll out)
- Mozzarella cheese, sometimes I add in Cheddar for some variety
- Fresh Spinach leaves
- Pepperoni (Dian here – I used ground turkey!)
- Egg White
- Parmesan cheese
Roll out the dough on a cookie sheet and start to layer your spinach, cheese & pepperoni. There really is no limit to what kind of ingredients you use. Just depends on what your family likes. The good news is my kids don’t really notice the spinach!
Pepperoni & Cheese Bread
Once all of your ingredients are layered on, you can begin to roll the dough up.
When you are done rolling, pinch the seam and both ends together so the cheese doesn’t ooze out. Make sure the seam is on the bottom, touching the cookie sheet.
I usually cook at 350 for 20+ minutes. You’ll just want to keep an eye on it in case it needs more or less time in your oven. Once it starts to brown you can brush it with a little egg white and sprinkle with parmesan cheese to make it pretty. Let it cool for 5-10 minutes and slice with a serrated bread knife.
Lay them out on a platter and serve ‘em up! If it’s just my family, they are usually gone before I can take them off the cookie sheet. What ingredients are you going to try?

Did I say that I am loving this recipe! Wish I had eaten it yesterday. Back on the old ball and chain diet today. But next weekend….on my cheat day….I am so making this. It really wouldn’t be all that bad if I just watched my portions. I love the spinach part. Anyway, this is my kind of comfort food.

@Susan Merritt: I think, for me it’s the pizza dough that’s a problem – because of my low – no carb mentality! 🙂 So, the thinner I roll it out the better about it I feel – the cheese and Turkey that I use don’t bother my kind of diet – and I LOVE the spinach – just pile it on!!

Just made this for dinner tonite, and my daughter is LUVIN it!!! I couldn’t find my rolling pin so I didn’t get my dough rolled out the way I wanted to, so it came apart a little, but the cheese didn’t ooze out as much. This was very good!! Can’t wait for Hubby to get home from work so he can try it. Thanks for this. I am also lovin your blog. I started couponing last year, fell off the end of last year until about 3months ago, and boy have I missed it!! Keep doing what you do!!! Shonda
