This time of year everyone wants that perfect cake recipe. I believe this is the BEST pound cake recipe you will ever find.
You can replace the lemon flavors with vanilla and make a simple pound cake that will have everyone singing your praises.

The ingredients are very simple. You will simply add these ingredients in any order with the exception of the extract. Always add flavorings or extracts LAST.
I also suggest that you always mix well after each egg. You cannot mess up with this recipe. Also, if you are making this cake with REAL lemon juice, you will need a considerable amount of juice.
You will need to add 6 tablespoons of juice or you can add 3 tablespoons and 1 tablespoon of vanilla extract. This is a very forgiving recipe so have fun with it.
Store the lemon pound cake in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.

- 4 Large Eggs
- 1/2 c vegetable oil
- 1/2 cup milk
- 8 oz sour cream
- 1 package of lemon pudding mix (you can replace this with a package of vanilla pudding or chocolate to make a different flavored pound cake)
- 1 tbl vanilla extract
- 1 tbl lemon extract
- BUTTER recipe cake mix
For a different twist, you can add poppy seeds to the batter or swap the lemon juice and zest for orange for a citrus variation.

Ingredients
- 4 Large Eggs
- 1/2 cup vegetable oil
- 1/2 cup milk
- 8 oz sour cream
- 1 package of lemon pudding mix (you can replace this with a package of vanilla pudding or chocolate to make a different flavored pound cake)
- 1 Tablespoon vanilla extract
- 1 Tablespoon lemon extract
- BUTTER recipe cake mix
Instructions
- Preheat oven according to instructions on cake mix box
- Grease and flour 2 loaf pans
- Add cake mix to mixer
- Add pudding mix
- Add vegetable oil
- Add eggs 1 at a time, beat after each egg is added
- Add milk
- Add sour cream and mix, scraping sides as you go
- Add vanilla and lemon extract (You can also use 6 Tablespoons of lemon juice)
- Scrape 1/2 mixture in 1 loaf pan and the other half in another loaf pan
- Bake according to instructions on cake mix box
