Well, I normally take the easy road and use Bisquick or some other pancake mix but when I want a really good pancake, I use a recipe from my “Joy of Cooking” cookbook (the newer one…I have two).
French Blueberry Pancakes Recipe
Nothing makes a morning better than a homemade breakfast, and you can’t have a proper breakfast feast without pancakes. It’s not the same without them. However, many of us don’t seem to have the time to make a home-cooked meal in the morning.
More often than not, we go for something quick and easy. The excellent news is pancake recipes are the perfect fix to that. Not only can you make the batter beforehand, but you can also make the pancakes in advance and freeze them until the next time you or your family have a craving for them. How great is that?
The best part is this recipe is unlike your typical pancake recipe. This one is for blueberry French pancakes. I made this the other morning since my grandchildren were here, and Poppy decided they needed some of these tasty treats.

French Blueberry Pancakes
Ingredients
- 3/4 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 2 tbsp powdered sugar
- Beat 2 eggs
- 2/3 cup milk
- 1/3 water
- 1/2 tsp vanilla
- 1/2—3/4 cup fresh blueberries
- Butter for griddle
Instructions
Mix in one bowl:
- 3/4 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 2 tbsp powdered sugar

In another bowl:
- Beat 2 eggs
- 2/3 cup milk
- 1/3 water
- 1/2 tsp vanilla
- 1/2—3/4 cup fresh blueberries
- Butter for griddle
- Mix the two bowls of ingredients together
- Add the blueberries
- DO NOT OVERMIX
I prefer to use buttermilk in place of the milk. I also like to add oats for added texture.
But this time, I followed the recipe and the kids loved them…..and so did I.

Ingredients
- 3/4 cups flour

- Grab another bowl and beat the eggs, then add 2/3 cup milk, 1/3 water, 1/2 tsp vanilla, and 1/2—3/4 cup fresh blueberries
- Mix the two bowls of ingredients together. DO NOT OVERMIX
- Cook pancakes until golden on both sides
